Quinoa, Black Bean and Corn Salad

  • 1 cup cooked quinoa
  • 1 can black beans, rinsed
  • 1 cup corn
  • 1 cup chopped mango
  • 1/2 cup onions, chopped
  • 1/2 cup tomatoes, chopped
  • 1/2 cup chopped cilantro
  • 1/4 cup black olives, sliced
  • 1/4 cup chopped Serrano peppers

Dressing

  • Zest and juice of 1 lime
  • 1/3 cup olive oil
  • 1/2 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed garlic
  • 1/2 teaspoon honey
  1. In a large bowl, place all the salad ingredients together.  Mix.
  2. In a small separate bowl, mix the dressing ingredients together.  
  3. Pour over salad, mix and serve.

Yields: 8 servings
