Caesar Salad with Prosciutto, Persimmon, Capers and Sundried Tomatoes

This is my most favorite salad ever.  It’s a switch up from the generic Caesar salad with croutons or that added chicken, salmon or shrimp.

  • 2 heads Romaine, chopped
  • 4 slices Prosciutto, chopped
  • 1 persimmon, sliced
  • 1/4 cup chopped sun dried tomatoes
  • 1 tablespoon capers
  • Croutons and shaved Parmesan, optional

Dressing

  • 1 egg
  • 5 cloves garlic
  • 1 tablespoon Dijon mustard
  • 1 anchovy
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1/2 cup olive oil
  • Juice of 1/2 lemon
  1. Arrange the salad ingredients in a large bowl.
  2. Purée the salad dressing ingredients.
  3. Toss salad.  If using croutons and Parmesan, add on top.

Yields: 2 servings
