Chicken Fried Rice

  • 4 cups cooked white rice, room temperature
  • 1.5 pounds chicken
  • 2 cup Chopped veggies
  • 2 eggs
  • Oil
  • Butter
  • Garlic, crushed
  • Soy sauce
  • Mirin
  • Salt and pepper
  1. In a large skillet, over medium high heat, heat a dash of oil. Scramble the two eggs, and cook. Remove from pan and set aside.
  2. Add another tablespoon of oil and a tablespoon of butter. Coat the pan, then sauté the vegetables for 2 minutes. Add some salt and pepper, garlic, 1 tablespoon of soy sauce and one of Mirin. Remove from pan and set aside.
  3. Chop the chicken to small pieces. Heat 2 tablespoons of oil and 2 tablespoons of butter. Coat the pan. Add the chicken and cook until white. Add salt, pepper and garlic to taste. Add 2 tablespoons of soy sauce and of Mirin. Remove fro pan and set aside.
  4. Add 3 tablespoons of oil and 3 of butter. Coat the pan. Add the rice, coating the rice with the oil mixture. Add salt, pepper and garlic to taste. Add about 3 tablespoons of soy sauce and Mirin. Coat evenly.
  5. Add the eggs, vegetables and chicken to the rice. Mix thoroughly.
  6. Serve.
