Quick Minestrone

1 cup minced onions
1 cup minced celery
1 tablespoon minced garlic
1 tablespoon olive oil
1 cup chopped tomatoes
1 cup chopped spinach or kale
1 cup chopped carrots
1 cup chopped zucchini
1 cup chopped cauliflower
1 cup Italian green beans
1 can red kidney beans, drained and rinsed
1 teaspoon salt
2 teaspoons basil
1 teaspoon oregano
1/2 teaspoon ground pepper
1 quart vegetable stock

Heat the olive oil in a pot over medium heat.

Add the onions, celery and garlic. Sauté until the onions are translucent, stirring frequently so the garlic does not burn.

Add the rest of the ingredients. Bring to a boil. Simmer 20 minutes.

Yields: 4 bowls or 8 cups.
