Summer Corn Salad

4 cups corn
1 can black beans, drained and rinsed
I red onion, chopped
1 cup cherry tomatoes, halved
1/2 cup cilantro, chopped
1 jalapeño, minced

Dressing
3 cloves garlic, minced
Juice of 1 lime
1 tablespoon honey
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon cumin
1 teaspoon oregano

Add the first set on ingredients in a bowl. Mix together.

Whisk the dressing ingredients together. It will be thick.

Pour dressing over salad, and mix thoroughly.

Chill.

Yields: 4 servings
