Almond Cake

  • 4 Oz. (1/2 cup = 1 stick) butter, room temperature
  • 5 Oz.(3/4 cup) sugar (caster)
  • 3 eggs
  • 1/2 teaspoon almond extract (essence)
  • 3 Oz. (3/4 cup) ground almonds (almond flour = almond meal)
  • 1 1/2 Oz. (1/3 cup) all-purpose flour (plain)
  • 1/2 teaspoon baking powder
  1. Preheat oven to 350 degrees. Prepare a 7″ baking pan.
  2. Cream the butter until light and fluffy.
  3. Add the sugar a little at a time.
  4. Beat in one egg at a time until fully incorporated. Add the almond extract.
  5. Mix in the almond flour. Then add the flour and baking powder.
  6. Pour into prepared pan and bake 40 minutes.
  7. Yields: 8-9 servings
