1 1/2 cups minced onions
1 cup minced celery
1 cup chopped carrots
6 garlic cloves, minced
2 tablespoons olive oil
1 pound great northern beans
1 pound smoked ham steak
1 tablespoon fresh thyme
1 tablespoon freshly ground pepper
2 quarts chicken broth
Sauté the onions, celery, carrots and garlic in a small pan until the vegetables soften.
Place the beans, broth, thyme, pepper in a slow cooker while the vegetables sauté.
Cube the ham steak and add to the slow cooker.
Stir in sautéed vegetables, and cook on low for 8 hours.
