Apple Walnut Scones with Salted Caramel

  • 2 cups all-purpose flour, sifted
  • 1 tablespoon baking powder
  • 1/3 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • pinch of allspice
  • I stick (1/2 cup) butter, chopped and cold
  • 1 cup chopped apples, like Granny Smith
  • 1 cup chopped walnuts
  • 2/3 cup unsweetened applesauce
  • 3/4 cup cream
  • 12 caramels. cut in half
  • 1 teaspoon salt

  1. Preheat oven to 400 degrees.
  2. In a large bowl, sift flour, baking powder, sugar and spices.  Mix thoroughly.
  3. Add the butter and rub into the flour mixture until the mixture looks like breadcrumbs.
  4. Add the apples and walnuts.
  5. Pour in the applesauce and cream.  Mix thoroughly.
  6. Roll out and cut 20 – 24 mini scones.
  7. Place on an ungreased baking sheet.  Make a thumbprint into each scone, and add a caramel.  Sprinkle salt over the caramel.
  8. Bake 18 minutes.

Yields: 20 – 24 mini scones.
