- 3/4 cup butter
- 1/2 cup extra fine sugar
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 3 eggs
- 2 teaspoons vanilla extract
- 1/2 cup brown sugar
- 2 cups berries
- 1/2 teaspoon cardamom
- Powdered sugar for dusting
Preheat oven to 375 degrees. Grease and line and 8″ springform pan.
Cream the butter until smooth. Add the sugar., and continue to beat until smooth.
Add the flour, and mix until the mixture looks like breadcrumbs.
Remove 1 cup of this mixture and set aside.
Add the baking powder and mix well. Then beat in the eggs and vanilla.
Spread into the baking pan, until even.
Add the berries on the top. Sprinkle the brown sugar on top.
Mix the cardamom into the reserved flour mixture and pour that on top evenly.
Bake for 50 – 60 minutes until the cake is golden brown.
Cool 10 minutes before removing from the pan.
Dust with powdered sugar.
