Pumpkin Cake

Growing up, Robert and I can tell you that our father was the one that grilled the meat AND made the desserts.  After the divorce, my mother did pick up making desserts, although cooking was her first passion, she managed to make some tasty desserts.  Perfect for the season, have a piece of cake!

Pumpkin Cake

2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon baking powder
1/2 teaspoon salt
2 cups sugar
1 cup vegetable oil

4 eggs
2 cups pumpkin

Mix all ingredients together at one time.  No need to sift.  Use either a 13″ x 9″ rectangular pan or two 8-inch pans.  Bake at 350 for 35 – 40 minutes.

Creamy Frosting

1 stick butter
1 8-ounce package cream cheese
1 box powdered sugar
2 teaspoon vanilla
1/2 cup – 1 cup chopped walnuts

Blend the first four ingredients until smooth.  Fold in the nuts.
